Abstract
Total antioxidant capacity (TAC) reflects food quality and redox state, and a simple, sensitive assay is needed. We synthesized a bimetallic AMP-Ce/Cu coordination polymer by one-pot room-temperature coordination of Ce4+, Cu2+, and adenosine monophosphate (AMP). Electronic coupling between Ce and Cu gave the polymer oxidase-like activity, letting it activate dissolved O2 directly; the bimetallic material reached ∼4-fold the activity of AMP-Ce4+ alone. Scavenger and electron paramagnetic resonance (EPR) assays showed superoxide radical as the dominant oxidant, with hydroxyl radical secondary. The sensor responded to AA linearly from 15 to 1750 nM and detected down to 4.5 nM. The oxidase-like activity retained >90% of its peak value across 0-55 °C. A paper-based strip delivered rapid, smartphone-assisted on-site readout. Applied to five tea varieties, the method separated their TAC levels. This work shows that lanthanide-transition-metal coordination polymer nanozymes can serve broad-temperature, on-site TAC detection.
